LCT visits New Preston: The quintessential New England village

NEW PRESTON — In a new feature, Litchfield County Times will be visiting nearby towns and villages and discovering what makes them special.

Our first stop is New Preston. Over the years the short but significant main street has become a mecca for the best shops — everything from designer clothing to garden accessories, home furnishings, farm-to-table offerings, a prize-winning candy shop, a chic country store offering everything from clothing to household accessories, a comfort food restaurant, a popular antique shop, an exceptional hair salon and a place to unwind — the perfect wine bar.

The first shop one encounters is Dawn Hill Antiques (dawnhillantiques.com), a mainstay of this charming town. Pauline and John Peden opened their shop over 20 years ago and ever since it has been the go-to place for the finest in Swedish antiques and design. Carefully selected and beautifully displayed, one is hard put to leave empty-handed.

Before leaving Dawn Hill, climb the stairs to check out Upstairs Antiques, several rooms of dealers showcasing antique furniture, rugs, artwork and decorative objects.

If you need fortification before you start your tour, stop in at Nine Main Bakery Deli (ninemainbakery.com) for fresh salads and creative sandwiches, a sampling of home-baked cakes and cookies, coffee, tea and other nonalcoholic beverages.

Joanna and Bill Seitz are the ones who started the whole design influx to this tiny town. Over 30 year ago they opened J Seitz (jseitz.com), offering a distinctive, carefully chosen selection of furniture, antiques, women’s and men’s apparel and accessories, gifts for babies and pets.

Adjacent to J Seitz is Pergola (pergolahome.com), where David Whitman and Peter Stiglin have created a center for the unusual and the unique in garden-related objects. There is a strong Japanese influence and one can find everything from topiaries to exotic plants to garden furniture and beautiful books.

Stroll further up the street to New Preston Kitchen Goods (newprestonkitchen.com), where Marty Rook has cornered the market for the best in kitchen utensils, place settings, dinnerware, glasses cookbooks — everything culinary you could ever want.

Before heading to the next shopping delight, stop in at The Smithy (thesmithytore.com) across the street. Housed in what was originally an 18th century blacksmith shop, it now is a place to find locally grown vegetables, condiments and products made by area artisans. Generally there is an art exhibition on the second floor, always worth a visit.

Suzanne Cassano and Richard Lambertson, owners of Privet House (proivethouse.com), have put together an extraordinary assortment of tabletop treasures, pillows galore, vintage furniture, soaps, candles, scarves, a finely honed selection of jewelry, and an incredible rare book department. Next door is Privet Lives (privetlives.com), featuring a series of pop-up shops from both local and visiting designers.

For the candy connoisseur, Sweeets has something to satisfy everyone’s sugar craving, from chocolates to jelly beans and everything in between. Next door, Dana Schulman, owner of DK Schulman (dkschulmandesign.com) and Sweeets, offers up a wide variety of style books, baby gifts, mommy gifts, dog gifts, hostess gifts and wedding gifts, in addition to the best place for custom stationery, invitations, and sensational gift wrappings.

Tuck around the corner and walk a few steps to Plain Goods (plain-goods.com), where Michael De Perno and Andrew Fry have a meticulously curated a selection of leather goods, clothing for men and women; cashmere scarves, napkins and selected antiques and vintage furniture; kitchenware, textiles and selected beauty products.

But that’s not all. Cross to the other side of East Shore Road and discover Salvatore Anthony Hair Studio (salvatoreanthony.com), the sleekest, chicest salon in Litchfield County. Sal Lopes is the consummate charmer, as well as a talented stylist. He offers coloring, cutting and a blow-dry in an intimate setting. Appointments are required.

After all the shopping and sightseeing, stop in at the Owl Wine Bar (owlnewpreston.com), right next door. Intimate and comfortable, with an impressive selection of wines and beers, as well as a menu of light food.

Spectacular Dutch babies are easy to make

As soon as the server elbows through the kitchen door and begins to wend her way through the pancake-house rush, you can’t take your eyes off what she is ferrying. It is an eggy crater the size of a dinner plate, with tender, fat-tire curves and a sweet aroma the Pied Piper only wishes he could deploy.

It’s called a Dutch baby on the menu, and the reason is far from apparent. No matter; it demands immediate, before-it-deflates eating, topped with a compote or a shower of confectioners’ sugar at least.

Who could make such a thing? You can, in short order. The batter ingredients are few and come together in a blender. Pour smooth, into a hot buttered pan, and the batter will shimmer and bubble in the oven until the moment of liftoff. Then, the pancake curls at the edges that rise above the rim, accompanied by an occasional mogul at the center.

It is an old recipe, and its history skews sweet. Pancakes in the Dutch Manner as presented in the 1998 cookbook “The Sensible Cook: Dutch Foodways in the Old and New World” resembled spiced (flat) crepes, while the topography gets much closer to Dutch baby territory in recipes for German puffed apple pancakes made hundreds of years ago. The origin of Dutch could be “Deutsch,” and the dish’s popularity in America is due in part to Sunset magazine articles dating back more than 50 years.

But the Dutch baby is versatile enough to step toward savory. In other words, have your way with it. Spice up the batter. Use the pancake as a vessel for fresh vegetables and greens. Melt thin rafts of cheese on it and cut it into snack wedges. Old World becomes modern.

There are but a few rules to keep in mind: The batter should be well blended; any added bits that have weight, such as diced pancetta or bell pepper pieces, may impede the rise, The pan and its fat must be h-o-t. The puffed Dutch baby needs to sit in the oven for a few minutes after the timer goes off, to improve the odds it will retain its structure longer.

These puffy, eggy pancakes are about the most versatile, quick and easy things you can make in a skillet – and if you don’t have the 8-inch skillets called for here, you can bake all the batter in a single 9- or 10-inch ovenproof skillet, or use a pie plate.

Here, the batter is barely sweetened and flavored, with optional toppings that work for breakfast and dessert.

The eggs need to be close to room temperature order to maximize their rise in the oven; see the quick technique for this, below.

INGREDIENTS:

For the pancakes

3 large eggs

3 tablespoons unsalted butter

3/4 cup flour

3/4 cup whole milk

1 to 2 tablespoons granulated sugar

1/2 teaspoon kosher salt

1/2 teaspoon vanilla extract

For the optional filling:

1 cup frozen cherries, preferably tart

1 heaping tablespoon granulated sugar

For the optional topping (your choice, or a mix):

Plain Greek yogurt

Pumpkin seeds (pepitas)

Maple syrup

Toasted slivered almonds

Granola

Confectioners’ sugar

DIRECTIONS:

For the pancakes: Preheat the oven to 425 degrees. Place the eggs in a bowl of warm tap water for 5 minutes, or until they are close to room temperature.

Divide the butter between two 8-inch cast-iron or ovenproof skillets; transfer to the oven. Watch closely so the butter melts, but do not let it brown or burn.

Beat the eggs in a blender on medium-high speed for 5 seconds, until frothy, then add the flour, milk, granulated sugar (to taste), salt and vanilla extract. Blend on low speed to incorporate, then blend on medium-high for 5 seconds.

Remove the hot pans from the oven and swirl the melted butter so it coats the sides. Immediately pour in the batter, dividing it evenly between the pans; bake (middle rack) for 13 to 15 minutes, until puffed and golden brown at the edges, which should curve and rise above the rim. Turn off the oven, and let them sit there for 5 minutes. This will help the pancakes keep their structure.

Meanwhile, make the optional filling: Combine the frozen cherries and granulated sugar in a small saucepan; cook over low heat for about 10 minutes, or until juices coat the back of a spoon. Turn off the heat.

Use a thin spatula to dislodge the Dutch babies from their pans; they should slide out. Cut into halves or wedges. Top each portion with some of the stewed cherries and an optional topping or two, if desired. Serve right away.

Cauliflower Jalape o Dutch baby

INGREDIENTS:

2 tablespoons unsalted butter (may substitute olive oil)

2 large eggs, at room temperature

1/2 cup flour

2 tablespoons harissa

1/2 cup regular or low-fat milk

Pinch kosher salt

2 cups white or green cauliflower florets, blanched

1 medium jalape o pepper, seeded and minced

Fresh, crunchy sprouts, such as a store-bought mix of lentils, green peas, adzuki beans

Handful cilantro leaves

Extra-virgin olive oil, for drizzlinG

DIRECTIONS:

Preheat the oven to 425 degrees.

Meanwhile, toss together the blanched cauliflower florets, jalape o, sprouts and cilantro in a bowl.

As soon as you remove the Dutch baby from the oven, top with cauliflower mixture, then drizzle with the oil, if desired. Use a thin spatula to dislodge the pancake; it should slide right out. Serve right away.

Today’s stylish kitchens go with the flow | Features/Entertainment …

Kitchens tend to be designed as star players on the residential stage. Their role is often aspirational  pro chef’s lair, for example, or the country kitchen from that Italian movie you loved.

But there’s a different story being played out by some kitchen designers today: kitchens that merge seamlessly into the rest of the main living space.

Sometimes that’s because there are space limitations  a smallish apartment, for example, where the kitchen is cheek-to-jowl with every other room. Or there may be plenty of space, but no walls, so each living zone looks into the next.

Some new kitchens are nearly invisible; others employ decorative and design elements that assimilate them into the look of adjoining spaces. Cabinetry is the same style, color, material and finish as other furniture. The color palette is the same or complementary. Lighting and accessories echo those in the principal rooms. Flooring is consistent throughout. Appliances are integrated. Even the island and countertops reflect materials used in adjoining spaces.

The Dunagan Diverio Design Group in Coral Gables, Florida, recently completed a Miami penthouse project with an open floor plan. The clients loved to cook and needed lots of space that functioned well.

“But they also wanted the kitchen to have clean lines and be completely integrated into the home’s design,” says firm co-founder Charlotte Dunagan. “We created a kitchen that flowed directly as part of the great room and living space. The concept we aimed for was to conceal as many of the appliances as possible, even going so far as to find a white oven to blend into the white cabinets.”

It was important to have the finishes all work together, says her partner, Tom Diverio.

“The kitchen really becomes part of the space, especially with the neutral oak wood flooring that continues throughout the home,” he says. “We were also careful to select finishes that were warm and inviting, which appear to be more like furniture.”

Pale walls in the open layout allowed for the residents’ art collection to carry through, further integrating the kitchen into the home.

Architect Dan Brunn in Los Angeles says he, too, keeps flooring the same throughout an open-plan home.

“The dining room and living room are typically connected to the kitchen, so we make the kitchen feel more ‘domesticated,’ less like a stainless steel lab,” he says. “One of my favorite things is to specify full custom-front appliances.”

New York City designer Amir Khamneipur took a similar approach with his Park Avenue apartment.

“I used flat-panel, semi-gloss-painted cabinetry throughout my kitchen,” he says. “The flat panels allow the kitchen cabinets to read as architectural elements. The geometry, symmetry and balance of lines created by the cabinetry seams were purposefully aligned with mirror work and fireplace height. These different elements coincide to create a harmonious look.”

Khamneipur chose a cream-and-neutral color palette for the minimalist kitchen, reflecting the serene vibe of the apartment. And he added a few clever features, like furniture-style legs on the kitchen island to reflect the neoclassical lines of a sofa and pedestal table across from it.

Dunagan says the inspiration for the Florida penthouse came from yacht design, in which all available space is maximized. A coffee station got tucked behind pocket doors. A laundry room, service kitchen and Sub-Zero appliances are also concealed behind wood doors or cabinets in the kitchen.

Modern materials and technology make “hiding” kitchen elements easy. Smart induction cooktops are nearly unnoticeable when not in use. Appliances that formerly sat on counters are now built into drawers. LED lighting can be installed virtually anywhere.

Henrybuilt, a Seattle designer and maker of kitchen furniture and storage systems, offers solid-surface counters with drainage for the sink. Storage cubbies for tools, napkins and bread are built into milled wood counters, which are then extended to create eating tables. Knife blocks, utensil, spices, pantry items, and recycle and trash receptacles all fit neatly out of sight in drawers and sliding cupboards.

Pay attention to how you illuminate the kitchen, says Sheva Knopfler, creative director of Brooklyn, New York-based Lights.com.

“The easiest way to streamline a kitchen is to incorporate simple lighting fixtures that blend in or almost disappear,” she says. “And consider paring down the number of lighting elements, opting instead for fewer, brighter overhead fixtures.”

Pick a style that suits you, and then create a visual flow with lighting in matching metallic finishes, she suggests.

And it’s fine to tweak that plan by adding a piece that’s got some drama or playfulness.

“A statement light allows you to add a bold dash of your personality. It becomes the ‘artwork’ of the space,” Knopfler says. Consider a large chandelier, or a grouping of pendant fixtures.
