Cast-iron skillet helps combat sticking problem

With patient care, she renewed its slick surface and brought it back to use, despite the fact that we own a glass-top range, for which such pans are, to say the least, not recommended. Cast iron by its very nature is extremely heavy, compared to more svelte modern aluminum and stainless steel utensils. You have to be pretty patient; a moment’s haste can land you with a cracked glass top. Complicating matters, the handle gets very hot, requiring a good potholder nearby at all times.
