Cast-iron skillets are versatile, useful

My cast-iron skillet has cooked up a lot of different recipes.

In the last few months alone, local chefs have used it to serve up ahi tuna, burgers and steak while filming cooking demonstrations in the Orlando Sentinel’s test kitchen.

It’s easy to see why: Well-seasoned cast irons retain heat, are nonstick and can form a good “crust” on foods like steak.

I typically forget to pull out my cast iron, despite it being one of the most versatile and useful tools in the kitchen.
