Chemical engineer turned baker offers tips for bread

Drew Gahagan, chemical engineer turned baker, offers a few tips for would-be bread makers:

• Heat the oven up to 500 degrees. Place the bread inside. Then turn the oven back down to the appropriate cooking temperature.


• Use a baking stone.

• Place 1/2 cup of water into an iron skillet or directly into the bottom of the oven. 

• Keep the door closed as much as possible to maintain the high heat.
