WAUKESHA
When Spring City Restaurant and Rox Bar Grille owners
Peter and Dennis Hronis see an opportunity for their business,
they seize it.


What
once was a McDonalds was transformed into the family style
restaurant at 2820 N. Grandview Blvd. 11 years ago. When the
brothers looked at the sizable space left vacant where the
drive-thru once stood, they turned it into Rox Bar, which is
attached to the restaurant, about five years ago.

It
all started though when Peter Hronis would leave his restaurant at
the time, Daves Restaurant in downtown Waukesha, on a Saturday
afternoon to return home on the western side of the city and
couldnt find a place to have a pizza and beer nearby. He said
he and his wife would end up on Sunset Drive.

When
it was time to make a change, Peter Hronis partnered with his
brother, Dennis, who owned Arts Restaurant in Oconomowoc for
many years, to open Spring City Restaurant.

Dennis
Hronis said with both of their restaurants being smaller it was
hard for them to get away. But now owning a larger operation and
with two owners, they are able to escape from the daily grind of
running a business more frequently.

Its
a lifestyle; its not just a job, Dennis Hronis said.

The
brothers, originally from Greece, employ about 30 to 35 people,
including longtime kitchen staff.

Spring
City Restaurant has an extensive menu that includes breakfast,
lunch and dinner options, such as pizza made in an oven with a
brick bottom, a Greek salad that can be topped with gyro meat,
fried chicken, sandwiches, seafood, pancakes, omelets and
skillets.

The
menu is designed to serve the 2year-old to the grandparents,
Dennis Hronis said.

Rox
Bar has a bar menu as well, which is cooked in the same kitchen.

After
running Spring City
Restaurant successfully for several years, Peter Hronis said he
saw opportunity for expansion.

Its
a large place. We wanted to utilize the space, he said. Hence,
the bar was added, which has many TVs that show sports games and
12 to 18 beers on tap, including specialty craft beers.

At
Spring City Restaurant and Rox Bar, the focus is on serving
quality food, the brothers said.

We
dont compromise on quality here, Dennis Hronis said. We
buy the good stuff no matter what.

The
menu also offers gluten-free options, as well as items for those
who are seeking healthy options. The brothers strive to keep a
clean facility with good service, including delivery service to
businesses for weekday lunch and general delivery every day from 5
p.m. to 10 p.m.

We
