Hand Fire Pizza fills a need

Pesto Pizza


• 16 ounces pizza dough

• Mozzarella cheese (light on the mozz)

• Goat cheese in dollops

• Cherry tomatoes, cut in half

• Pesto

• Nut-free pesto

• 2 cups Fresh picked basil, tightly packed

• 1/8 cup garlic cloves

• 1/2 cup Asiago cheese, grated

• 1 cup good quality California olive oil

• 1 teaspoon Kosher salt

• 1 teaspoon fresh lemon juice


1. In a food processor or blender, add garlic, cheese, salt and lemon juice.

2. Pulse for a few seconds before adding the basil.

3. Add olive oil slowly until fully combined.

4. Be careful not to overheat the pesto.

5. To assemble, roll or pat out crust

6. Spread with pesto sauce

7. Top with cheeses, then tomatoes.

8. Bake until done in an extremely hot oven.
