Recipe: SeaWatch Skillet of caramelized mushrooms – Sun

SeaWatch Skillet of caramelized mushrooms

Chef Darryl Shuford likes the versatility of this side dish that pairs well with seafood, steak or roast chicken. He serves the mushrooms in individual black cast-iron skillets, which he partially credit for the popularity of the recipe.


1 tablespoon olive oil

8 ounces button mushrooms, cleaned, trimmed, left whole

1 sprig fresh thyme, leaves picked

1 tablespoon unsalted butter

1 tablespoon chopped Italian parsley

Kosher salt and freshly ground black pepper, to taste

Using a large skillet over medium high heat, heat the olive oil. Add the mushrooms and thyme and sauté until golden brown. Allow mushrooms to cook without moving around too much to prevent the juices from releasing. Add the butter and parsley tossing to combine. Season with salt and pepper, to taste.

Makes two servings
