The Buzz: Rico’s to open 3rd restaurant

Rico’s Family Restaurant will open its third location in Kaukauna on Monday, barring any unforeseen last minute delays. 

The new restaurant is at 215 W. Wisconsin Ave. in two connected buildings. 

“There’s an opportunity in Kaukauna to serve people, to be a part of the community,” said owner Efrain “Rico” Carrasco, on why he is opening here. 

His other two locations are at N3994 Columbia Ave. in Freedom and 427 S. Washington St. in Combined Locks. Before opening the Freedom restaurant in 2006, he managed the Cruise In Diner in Kaukauna for three years. 

All three Rico’s locations are simple family diners that have extensive breakfast, lunch and dinner menus. They serve American fare like skillets, pancakes, burgers, sandwiches and fried chicken. Prices are low to moderate. 

In his overall vision, Carrasco wants to continue to expand. 

“This is my plan: to cover this area and start moving out. I dream to become a franchised company. I would love to have a Rico’s everywhere,” he said. 

The Kaukauna restaurant is next door to a building he operated last summer as Rico’s Ice Cream. He will not reopen that separate seasonal ice cream shop. Instead, he moved the ice cream counters inside the new restaurant next door and will offer ice cream year-round. 

Carrasco declined to give a figure on how much he’s spending to open the new Kaukauna restaurant. 

“This is the first one we have started from scratch,” he said. “It takes a lot to start a business. Everything is so expensive.” 

His prior restaurants opened in buildings that had been set up as restaurants. The Freedom location had formerly been What’s Cookin’ and the Combined Locks location had been Kim’s Place. 

In Kaukauna, the two buildings previously housed stores selling liquor, gifts or videos and a martial arts school. 

Carrasco has a staff of 20 to 22 in Kaukauna, and they’ve been training in his existing restaurants.
