Tips for induction cooktop cooking

Induction cooktops are the latest in modern cooking technology, and with simple adjustments to cooking techniques and kitchen equipment upgrades from Oakville Appliance Centre in Oakville, Ontario, you can enjoy this clean, energy-efficient and speedy new approach to cooking.

Each cooking surface of an induction cooktop has an electromagnetic copper induction coil underneath a ceramic plate. Electric current is transmitted through the induction coil, which results in a fluctuating magnetic field. When the appropriate pot is placed on the active cooking surface, the current is converted to heat inside the cookware. The heat is instant and effective — the pot is heating, not the cooktop — cooking the contents quickly and consistently.

For a successful transition to induction cooking, some adjustments to your kitchen equipment and cooking techniques may be required.

You may need to upgrade your cookware. Induction cooktops will work with induction-capable cookware only — cast iron, or certain stainless-steel pots and pans. You can check existing or new pots and pans with a magnet. If the magnet sticks with a strong hold, the pot will work on your induction cooktop.

Induction cooking is a faster process than with electric or gas cooktops. Initially, you will have to pay special attention to the items you are heating to prevent overheating, and adjust cooking times for recipes accordingly. When you remove the pot from the cooktop surface, the heating will stop. As a bonus, the lack of cooktop surface heat means cleaning up spills is quick and easy.

You’ll need to retire your digital thermometer, as magnetic fields interfere with digital technology. Old-fashioned analog thermometers will provide a reliable solution.
